1/3 cup butter, melted
1/4 cup sugar
1/4 cup brown sugar
1 egg, beaten
1/2 tsp salt
1 1/2 tsp baking powder
3/4 cup milk
2 cup old-fashioned oats
1/2 tsp cinnamon
1/2 cup frozen blueberries
1/4 cup pecans, toasted and chopped

  • Preheat the oven to 350°F.
  • In a large mixing bowl, stir together the butter, sugars, and egg until blended. Add the remaining ingredients and mix well. Pour into a greased 9×5 loaf pan.
  • Bake for 20-30 minutes, until ‘set’ in the middle.
  • This recipe is also fabulous with other fruit and nut combinations. Strawberries and walnuts…peaches and pecans…raspberries and almonds. The sky is the limit!
  • Oh, and you’ll be glad to know that this dish can easily be doubled and baked in a 9×13 dish for 35-40 minutes. It’s so good that you may just want to plan on that from the beginning. Trust me.
